Toasted Almond & Coconut Cake with White Chocolate Ganache
1. Prepare the Cake:
- Preheat oven to 180°C (350°F).
- Grease and line a cake pan.
- In a bowl, whisk flour, baking powder, salt, coconut, and ground almonds.
- In another bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, then vanilla.
- Gradually add dry ingredients alternating with milk.
- Pour into pan and bake for 35–40 minutes (until a toothpick comes out clean).
- Let cool completely.
